Fillet knives are used to work with fish or meat fillets, as well as with some other products. However, they are not designed for very high loads, which must be taken into account. The Opinel No. 10 fits perfectly into this series and is one of its most popular representatives. This knife is made of stainless steel called Sandvik 12C27. It is a well balanced Swedish alloy with excellent corrosion resistance. At the same time, such a metal has a hardness of up to 58 HRC, which allows knives made from it to go without sharpening for a long time. The length of the blade is 10 cm. It is smoothly sharpened to the very tip and, in accordance with the purpose of the knife, has a narrow blade and a sharply sharpened and rather thin tip. The blade remains very flexible and it is convenient to cut the fillet from the bone with such a knife. The blade of this knife is mirror polished.
The handle is made from solid ebony. Its wood is very dense and heavy and belongs to valuable species. And after special processing, the knife handle becomes not susceptible to moisture. In addition, the ebony handle does not require complex care. The appearance of a knife with an ebony handle is worthy of the highest praise: the wood is dark and almost black veins can be seen on it.
The third important component in the design of the Opinel No. 10 knife is the lock. In this model, the classic lock for the Opinel brand - Viroblock - has been used. Its design is a clutch. The lock is able to hold the knife blade both open and closed, making it even safer to use. The knife is packed in a wooden case.
